Does anybody know where I can mail-order copper saddles for a Taylors cooker pipework? I can't find any small enough from normal suppliers... and am at a bit of a loss.

BES Plumbing Supplies .
Search with Copper Saddle Bands. Good firm to deal with.

Snap! Once i've finished the lockers surrounds and woodwork painting. I think the Pipe supplied is 5mm but don't quote me on that. Are you using pipe benders on the mark 1 knee?

Try your local Electrical wholesalers. Ask for "Piro cable" clips they look like an open letter "P" They come in sizes for 1/8" or 3mm to over 1/2" or 15mm plain copper or soft plastic coated usually Red. and are plenty strong enough to do the job.
Added note. Not wishing to knock Twisterowner's good response but the piro ones are much stronger then pluming ones.
Cheers David.
