Anyone interested in Antarctica needs to read up on anything re Shackleton and Endurance. That's compulsory.
There are lots of photo books from recent times, all are worth looking into. You could also check out some of trip guide books, not specific to small boats, if you're interested in the actualities of the real places rather than the accounts in books & magazines which can be somewhat dramatized.

As to the Arctic, our friends Alvah and Di Simon did the wintered-in thing off Greenland. The book is "North to the Night" (Alvah Simon).
